Loosely translated as ‘Top of the Shelf’, in other words the top spice mix. An aromatic blend of spices which includes dried rose petals. Wonderful either as a rub or seasoning. Traditionally used for lamb but is equally good with chicken or pork. Try it as a rub for fresh salmon.
