A curry mix without the usual chillies. The heat coming from the cayenne and mustard. The sweetness and fragrance the ginger adds could be enhanced by the addition of cardamom too. Best results can come from marinating the main ingredients (chicken for eg) using this mix, then chargrilling slightly before adding the tomatoes and cooking through
